Chaparro, new Apellation of Origin in El Salvador
Chaparro is a traditional alcoholic beverage in El Salvador made of white corn and “panela” candy, which comes from unrefined whole cane sugar typical of Central and Latin America in general. It started as a craft beverage many centuries ago but it is now being produced by several salvadoran companies at more industrial level and with all the quality controls, sanitary registrations and legal permits to be able to commercialize it in El Salvador and other countries. The 2 main trademarks for Chaparro are Flor de Fuego and Eramon.
 
This is the second Apellation of Origin from El Salvador. The first one was for Apaneca-Ilamatepec Coffee. The Ministry of Economy since 2014 has been working very hard with local producers to promote representative products that El Salvador already has and especially such products that could be recognized with the category of Apellation of Origin or a Geographical Indication. Other products like Cacahuatique Coffee, Santa María Ostuma pineapple, Ilobasco crafts and  San Sebastián looms are some examples.
